Black Pepper Vodka (Refined)

Ingredients

  • 750ml Tito's
  • 3 tbsp whole black peppercorns (Tellicherry preferred — larger, more aromatic)
  • 1 tsp pink peppercorns (floral)
  • ½ tsp white peppercorns (heat without aromatic distraction)
  • ½ tsp dried green peppercorns (vegetal complexity)
  • 1 small bay leaf
  • ½ tsp coriander seeds (optional — citrus-pepper bridge)
  • ¼ tsp whole allspice (optional — warm undertone)

Method

  1. Stage 1 — Toast (critical): Black peppercorns in dry skillet medium heat 30–45 sec, shaking continuously, until fragrant. Do not burn.
  2. White peppercorns separately 15–20 sec (burn faster).
  3. If using coriander + allspice: lightly toast 15 sec. Do NOT toast pink or green (too delicate).
  4. Stage 2 — Crack: light crack black + white peppercorns (quarter-pea). Leave pink/green whole.
  5. Stage 3 — Single infusion (36–48 hrs): all in 1L glass jar, room temp 36 hrs. Taste at 24 and 36 hrs. CRITICAL: do not exceed 48 hrs.
  6. Stage 4 — Strain immediately: fine-mesh → cheesecloth funnel → coffee filter (1–2 hr slow drip).
  7. Stage 5 — Rest + bottle: clean 750ml bottle. Rest in fridge ≥24 hrs before drinking — flavor integrates and softens significantly.
